Die Trauben, die zum Zeitpunkt der Lese einen h\u00f6heren Zuckergehalt aufweisen, ergeben Weine mit h\u00f6herem Alkoholgehalt. Dies wirkt sich auf die Qualit\u00e4t des Weins aus, die den Erwartungen der Verbraucher nicht mehr entspricht.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Um dieser Herausforderung zu begegnen, hat W Platform die L\u00f6sung \u201eLESS ALCO\u201c entwickelt. Dieses vom Cluster Inno\u2019Vin unterst\u00fctzte Projekt zielt darauf ab, ein Verfahren zu entwickeln, mit dem der Alkoholgehalt von Weinen w\u00e4hrend der G\u00e4rungsphase um einige Grad gesenkt werden kann.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cEchos de Bordeaux\u201d berichtet dar\u00fcber in seinem Artikel \u201cGemeinschaftsprojekt Lessalco\u201c: \u201e<em>Zun\u00e4chst wurde im Labor und unter halbindustriellen Bedingungen eine technische Machbarkeitsstudie mittels CO\u2082-Stripping durchgef\u00fchrt. Diese Studie erm\u00f6glichte es, den Nutzen des konzipierten Verfahrens zu best\u00e4tigen, Betriebsparameter zur Prozessoptimierung festzulegen und <\/em><strong><em>die Auswirkungen auf die aromatische Komplexit\u00e4t quantifizieren<\/em><\/strong><em> Weine, die am Ende der G\u00e4rung durch Analysen des Weins und der gewonnenen Wasser-Alkohol-Mischung hergestellt werden.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jean-Philippe Ricard, Mitbegr\u00fcnder von W Platform, erkl\u00e4rt: <em>&nbsp;\u201cInno\u2019vin hat die Einleitung des Projekts erm\u00f6glicht, indem es den technischen Nutzen best\u00e4tigt und die Einwerbung von F\u00f6rdermitteln seitens BPI France und der Region Nouvelle-Aquitaine erleichtert hat. Inno\u2019vin hat es uns zudem erm\u00f6glicht, Fachprofessoren auf diesem Gebiet am Institut f\u00fcr Reb- und Weinbauwissenschaften zu identifizieren, wodurch wir einen Praktikanten f\u00fcr die Durchf\u00fchrung der ersten Labortests unter der Leitung von R\u00e9my Ghidossi sowie eine Studentin f\u00fcr die Erstellung einer Abschlussarbeit zu diesem Projekt gewinnen konnten.\u201d<\/em>\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>In einem zweiten Schritt trat das Unternehmen im Jahr 2023 in eine Entwicklungsphase ein, in der der Prozess unter realen Bedingungen demonstriert und ein funktionsf\u00e4higer Prototyp entwickelt wurde.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>In der dritten Phase, von 2024 bis 2025, wird das System anhand einer Vorserie und mehrerer Tests unter realen Bedingungen optimiert, um die Anwendungsprotokolle so anzupassen, dass eine Senkung des Alkoholgehalts um 0,5 bis 2 Grad gew\u00e4hrleistet ist, w\u00e4hrend <\/em><strong><em>unter Erhalt der Aromen<\/em><\/strong><em> \u201dund mit einem sehr geringen Energieverbrauch.\u201c<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Das Stripping-Verfahren, bei dem CO\u2082 zur Senkung des Alkoholgehalts im Wein eingesetzt wird, ist ein innovatives Verfahren, das die organoleptischen Eigenschaften des Weins bewahrt. Bei dieser Technik wird zun\u00e4chst Kohlendioxid in den Wein eingeleitet. Das CO\u2082 in gasf\u00f6rmigem Zustand bildet Bl\u00e4schen, die durch die Fl\u00fcssigkeit str\u00f6men. Aufgrund der fl\u00fcchtigen Eigenschaften von Ethanol ziehen die CO\u2082-Bl\u00e4schen den im Wein enthaltenen Alkohol an und binden ihn.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">W\u00e4hrend die CO\u2082-Blasen an die Oberfl\u00e4che steigen, nehmen sie Alkoholmolek\u00fcle mit sich, wodurch diese aus dem Wein extrahiert werden k\u00f6nnen, ohne dass eine Temperaturerh\u00f6hung erforderlich ist. Diese Niedrigtemperaturmethode ist entscheidend f\u00fcr die Erhaltung der zarten Aromen und einzigartigen Geschmacksnoten des Weins und verhindert so die organoleptischen Ver\u00e4nderungen, die andere Entalkoholisierungsverfahren verursachen k\u00f6nnen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Das mit Alkohol angereicherte CO\u2082 wird anschlie\u00dfend in einer Stripping-S\u00e4ule vom Wein abgetrennt. Dieser Vorgang wird so lange wiederholt, bis der gew\u00fcnschte Alkoholgehalt erreicht ist. Das verwendete CO\u2082 kann recycelt und wieder in das System zur\u00fcckgef\u00fchrt werden, was das Verfahren wirtschaftlicher und umweltfreundlicher macht.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Diese CO\u2082-Stripping-Technik ist besonders vorteilhaft, um den Alkoholgehalt der Weine trotz der globalen Erw\u00e4rmung auf dem gleichen Niveau oder etwas darunter zu halten und damit der steigenden Nachfrage der Verbraucher nach alkoholarmen Getr\u00e4nken gerecht zu werden. Zudem erm\u00f6glicht sie die Einhaltung der geltenden gesetzlichen Vorschriften zum Alkoholgehalt bei gleichzeitiger Wahrung der Qualit\u00e4t und des unverwechselbaren Charakters des Weins. Diese Methode gew\u00e4hrleistet, dass die Weine ihren unverwechselbaren Charakter und ihre organoleptischen Eigenschaften behalten, und erm\u00f6glicht es den Winzern, auch in einem sich wandelnden Umfeld weiterhin hochwertige Weine zu produzieren.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Die Auswirkungen dieses Projekts sind vielf\u00e4ltig und vielversprechend. Das Projekt \u201eW Platform\u201c ist weltweit ausgerichtet und umfasst weitere bedeutende Innovationen, die die Wiederverwendung von G\u00e4rungs-CO\u2082 direkt in den Weinkellern und Weinbergen erm\u00f6glichen. Dieser Ansatz f\u00fcgt sich nahtlos in ein Kreislaufwirtschaftskonzept ein, das es den Winzern erm\u00f6glicht, ihren Bezug von CO\u2082 fossilen Ursprungs zu reduzieren, und zur Erf\u00fcllung ihrer CSR-Verpflichtungen beitr\u00e4gt.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Das in Bordeaux ans\u00e4ssige Unternehmen stellt seine wichtigsten Produkte vor Ort her und verzeichnet seit einem Jahr ein starkes Wachstum.
