{"id":1135,"date":"2026-08-24T19:09:39","date_gmt":"2026-08-24T17:09:39","guid":{"rendered":"https:\/\/w-platform.fr\/?p=1135"},"modified":"2026-08-25T09:06:31","modified_gmt":"2026-08-25T07:06:31","slug":"risque-co%e2%82%82-dans-les-chais-viticoles-comment-proteger-vos-equipes","status":"publish","type":"post","link":"https:\/\/w-platform.fr\/en\/2026\/08\/24\/risque-co%e2%82%82-dans-les-chais-viticoles-comment-proteger-vos-equipes\/","title":{"rendered":"CO2 risk in wine cellars: prevention and safety"},"content":{"rendered":"<p class=\"wp-block-paragraph\">Each year, the grape harvest season recalls a reality that is often underestimated: the carbon dioxide (CO\u2082) resulting from fermentation constitutes one of the primary risks in wine cellars.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Invisible, heavier than air, and capable of rapidly displacing oxygen, it can cause severe illness or even fatal accidents when it accumulates in low-lying areas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While CO\u2082 capture and utilization represent a tremendous environmental and economic opportunity today, they must imperatively be accompanied by an appropriate prevention strategy.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Why is CO\u2082 dangerous in a wine cellar?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Carbon dioxide naturally produced during fermentation has several characteristics that make it particularly dangerous:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>He is invisible;<\/li>\n\n\n\n<li>It is generally odorless;<\/li>\n\n\n\n<li>It is heavier than air and accumulates in pits, tanks or the lower parts of buildings;<\/li>\n\n\n\n<li>It acts as an asphyxiant gas by decreasing the concentration of available oxygen.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Unlike other industrial gases, the <strong>CO\u2082 does not trigger an immediate sensation of alert<\/strong>A person can lose consciousness without perceiving the danger.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>What are the effects of CO\u2082 on the body?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">It is important to note that the risk depends not only on the concentration of CO\u2082 in the air, but also on the duration of exposure.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To assess this risk, <a href=\"https:\/\/www.inrs.fr\/publications\/bdd\/fichetox\/fiche.html?refINRS=FICHETOX_238&amp;section=VLEPMesurage\" target=\"_blank\" rel=\"noreferrer noopener\">The INRS relies on Occupational Exposure Limits (OELs)<\/a>, which define the maximum concentrations to which an employee may be exposed without any known adverse health effects. In France, the indicative regulatory VLEP for carbon dioxide is set at 5,000 ppm (9,000 mg\/m\u00b3) over an average 8-hour workday.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In other words, a high concentration for a brief period does not have the same consequences as prolonged exposure. That is why continuous monitoring of concentrations, combined with appropriate warning systems, is essential to protect workers in wineries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">However, the first effects on the body may appear at higher concentrations, as shown in the table below.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The first effects appear as soon as the concentration increases:<\/p>\n\n\n\n<figure class=\"wp-block-table is-style-stripes\" style=\"font-size:15px\"><table class=\"has-primary-color has-text-color has-link-color has-fixed-layout\" style=\"border-width:2px\"><tbody><tr><td class=\"has-text-align-center\" data-align=\"center\"><strong>Concentration<\/strong><\/td><td class=\"has-text-align-center\" data-align=\"center\"><strong>Effects<\/strong><\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">3,000 to 5,000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Accelerated breathing, headache<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">5,000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Increased respiratory rate<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">10,000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Fatigue, feeling hot, decreased alertness<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">20,000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Severe headaches, rapid breathing<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">&gt;5 %<\/td><td class=\"has-text-align-center\" data-align=\"center\">Risk of serious health problems that may become irreversible with prolonged exposure<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">One of the most common accidents is also known as the \u201crescuer\u2019s trap\u201d: a person attempts to rescue an unconscious coworker without respiratory protection and becomes a victim of the oxygen-depleted atmosphere themselves. That is why any intervention in a hazardous area must be carried out according to an appropriate procedure.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Regulations require that emissions be limited at the source<\/strong> <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Preventing CO\u2082 risks is not just a matter of following best practices.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.legifrance.gouv.fr\/codes\/article_lc\/LEGIARTI000018532314\">Article R.4222-12 of the Labor Code<\/a> provides that:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>\u201cEmissions in gaseous form (\u2026) are eliminated (\u2026) whenever production techniques permit. Otherwise, they are captured as they are produced, as close as possible to their source, and as efficiently as possible.\u201d<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This approach is also the one recommended by the MSA and the Labor Inspectorate during inspections conducted at wineries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In other words, capturing CO\u2082 at the source is currently one of the most effective ways to reduce the risk in the long term.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Beyond Sampling: Continuously Monitoring Concentrations<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Capturing CO\u2082 is the first step.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But safety also depends on continuous monitoring class=\"wp-block-paragraph\">As part of an on-site support initiative, several optimizations were deployed at Ch\u00e2teau Latour in 2024 to enhance team safety:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>repositioning of the sensors to improve the detection of sensitive areas;<\/li>\n\n\n\n<li>Graphical interface modification with visualization of minimum and maximum thresholds and visual alert starting at 1,500 ppm;<\/li>\n\n\n\n<li>setup of an SMS alert starting from 5,000 ppm, with configuration of sending frequencies and notification time slots;<\/li>\n\n\n\n<li>improved reliability of data feedback thanks to a new SIM card dedicated to the LoRaWAN network.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">These adjustments allow for more responsive monitoring and better anticipation of at-risk situations.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>A connected platform to enhance security<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Risk prevention today relies on tools capable of centralizing data and alerting the right people at the right time.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The WP Data
