{"id":1135,"date":"2026-08-24T19:09:39","date_gmt":"2026-08-24T17:09:39","guid":{"rendered":"https:\/\/w-platform.fr\/?p=1135"},"modified":"2026-08-25T09:06:31","modified_gmt":"2026-08-25T07:06:31","slug":"risque-co%e2%82%82-dans-les-chais-viticoles-comment-proteger-vos-equipes","status":"publish","type":"post","link":"https:\/\/w-platform.fr\/es\/2026\/08\/24\/risque-co%e2%82%82-dans-les-chais-viticoles-comment-proteger-vos-equipes\/","title":{"rendered":"Riesgo de CO2 en las bodegas vitivin\u00edcolas: prevenci\u00f3n y seguridad"},"content":{"rendered":"<p class=\"wp-block-paragraph\">Chaque ann\u00e9e, la p\u00e9riode des vendanges rappelle une r\u00e9alit\u00e9 souvent sous-estim\u00e9e : le dioxyde de carbone (CO\u2082) issu de la fermentation constitue l&rsquo;un des principaux risques dans les chais vinicoles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Invisible, plus lourd que l&rsquo;air et capable de remplacer rapidement l&rsquo;oxyg\u00e8ne, il peut provoquer des malaises graves voire des accidents mortels lorsqu&rsquo;il s&rsquo;accumule dans les zones basses.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si la captation et la valorisation du CO\u2082 repr\u00e9sentent aujourd&rsquo;hui une formidable opportunit\u00e9 environnementale et \u00e9conomique, elles doivent imp\u00e9rativement s&rsquo;accompagner d&rsquo;une strat\u00e9gie de pr\u00e9vention adapt\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pourquoi le CO\u2082 est-il dangereux dans un chai ?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le dioxyde de carbone produit naturellement lors de la fermentation poss\u00e8de plusieurs caract\u00e9ristiques qui le rendent particuli\u00e8rement dangereux :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Il est invisible ;<\/li>\n\n\n\n<li>Il est g\u00e9n\u00e9ralement inodore ;<\/li>\n\n\n\n<li>Il est plus lourd que l&rsquo;air et s&rsquo;accumule dans les fosses, les cuves ou les parties basses des b\u00e2timents ;<\/li>\n\n\n\n<li>Il agit comme un gaz asphyxiant en diminuant la concentration d&rsquo;oxyg\u00e8ne disponible.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Contrairement \u00e0 d&rsquo;autres gaz industriels, le <strong>CO\u2082 ne provoque pas de sensation d&rsquo;alerte imm\u00e9diate<\/strong>. Une personne peut perdre connaissance sans percevoir le danger.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Quels sont les effets du CO\u2082 sur l&rsquo;organisme ?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Il est important de pr\u00e9ciser que le risque ne d\u00e9pend pas uniquement de la concentration de CO\u2082 pr\u00e9sente dans l&rsquo;air, mais \u00e9galement de la dur\u00e9e d&rsquo;exposition.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour \u00e9valuer ce risque, <a href=\"https:\/\/www.inrs.fr\/publications\/bdd\/fichetox\/fiche.html?refINRS=FICHETOX_238&amp;section=VLEPMesurage\" target=\"_blank\" rel=\"noreferrer noopener\">l&rsquo;INRS s&rsquo;appuie sur les Valeurs Limites d&rsquo;Exposition Professionnelle (VLEP)<\/a>, qui d\u00e9finissent les concentrations maximales auxquelles un salari\u00e9 peut \u00eatre expos\u00e9 sans effet n\u00e9faste connu pour sa sant\u00e9. En France, la VLEP r\u00e9glementaire indicative pour le dioxyde de carbone est fix\u00e9e \u00e0 5 000 ppm (9 000 mg\/m\u00b3) sur une dur\u00e9e moyenne de 8 heures de travail.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Autrement dit, une concentration \u00e9lev\u00e9e pendant quelques instants n&rsquo;a pas les m\u00eames cons\u00e9quences qu&rsquo;une exposition prolong\u00e9e. C&rsquo;est pourquoi la surveillance continue des concentrations, associ\u00e9e \u00e0 des syst\u00e8mes d&rsquo;alerte adapt\u00e9s, est essentielle pour prot\u00e9ger les op\u00e9rateurs intervenant dans les chais.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les premiers effets sur l&rsquo;organisme peuvent n\u00e9anmoins appara\u00eetre \u00e0 des concentrations croissantes, comme l&rsquo;illustre le tableau ci-dessous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les premiers effets apparaissent d\u00e8s que la concentration augmente :<\/p>\n\n\n\n<figure class=\"wp-block-table is-style-stripes\" style=\"font-size:15px\"><table class=\"has-primary-color has-text-color has-link-color has-fixed-layout\" style=\"border-width:2px\"><tbody><tr><td class=\"has-text-align-center\" data-align=\"center\"><strong>Concentration<\/strong><\/td><td class=\"has-text-align-center\" data-align=\"center\"><strong>Effets<\/strong><\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">3 000 \u00e0 5 000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Acc\u00e9l\u00e9ration de la respiration, maux de t\u00eate<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">5 000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Augmentation de la fr\u00e9quence respiratoire<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">10 000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Fatigue, sensation de chaleur, baisse de vigilance<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">20 000 ppm<\/td><td class=\"has-text-align-center\" data-align=\"center\">Maux de t\u00eate importants, respiration acc\u00e9l\u00e9r\u00e9e<\/td><\/tr><tr><td class=\"has-text-align-center\" data-align=\"center\">&gt;5 %<\/td><td class=\"has-text-align-center\" data-align=\"center\">Risque de troubles graves pouvant devenir irr\u00e9versibles en cas d&rsquo;exposition prolong\u00e9e<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;un des accidents les plus fr\u00e9quents est \u00e9galement connu sous le nom de \u00ab\u00a0pi\u00e8ge du sauveteur\u00a0\u00bb : une personne tente de secourir un coll\u00e8gue inconscient sans protection respiratoire et devient elle-m\u00eame victime de l&rsquo;atmosph\u00e8re appauvrie en oxyg\u00e8ne. C&rsquo;est pourquoi toute intervention en zone \u00e0 risque doit \u00eatre r\u00e9alis\u00e9e selon une proc\u00e9dure adapt\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>La r\u00e9glementation impose de limiter les \u00e9missions \u00e0 la source<\/strong> <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La pr\u00e9vention du risque CO\u2082 ne rel\u00e8ve pas uniquement des bonnes pratiques.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.legifrance.gouv.fr\/codes\/article_lc\/LEGIARTI000018532314\">L&rsquo;article R.4222-12 du Code du travail<\/a> pr\u00e9voit que :<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>\u00ab Les \u00e9missions sous forme de gaz (&#8230;) sont supprim\u00e9es (&#8230;) lorsque les techniques de production le permettent. \u00c0 d\u00e9faut, elles sont capt\u00e9es au fur et \u00e0 mesure de leur production, au plus pr\u00e8s de leur source d&rsquo;\u00e9mission et aussi efficacement que possible. \u00bb<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cette approche est \u00e9galement celle pr\u00e9conis\u00e9e par la MSA ainsi que par l&rsquo;Inspection du travail lors des contr\u00f4les r\u00e9alis\u00e9s dans les exploitations viticoles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Autrement dit, la captation du CO\u2082 \u00e0 la source constitue aujourd&rsquo;hui l&rsquo;une des solutions les plus efficaces pour r\u00e9duire durablement le risque.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Au-del\u00e0 de la captation : surveiller en permanence les concentrations<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Capturer le CO\u2082 constitue une premi\u00e8re \u00e9tape.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais la s\u00e9curit\u00e9 repose \u00e9galement sur une surveillance continue de l&rsquo;atmosph\u00e8re.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">W Platform accompagne ses clients dans la mise en place viticole<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Dans le cadre d&rsquo;un accompagnement sur site, plusieurs optimisations ont \u00e9t\u00e9 d\u00e9ploy\u00e9es au Ch\u00e2teau Latour en 2024 afin de renforcer la s\u00e9curit\u00e9 des \u00e9quipes :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>repositionnement des capteurs pour am\u00e9liorer la d\u00e9tection des zones sensibles ;<\/li>\n\n\n\n<li>modification de l&rsquo;interface graphique avec visualisation des seuils minimum, maximum et alerte visuelle d\u00e8s 1 500 ppm ;<\/li>\n\n\n\n<li>mise en place d&rsquo;une alerte SMS \u00e0 partir de 5 000 ppm, avec param\u00e9trage des fr\u00e9quences d&rsquo;envoi et des plages horaires de notification ;<\/li>\n\n\n\n<li>am\u00e9lioration de la fiabilit\u00e9 des remont\u00e9es de donn\u00e9es gr\u00e2ce \u00e0 une nouvelle carte SIM d\u00e9di\u00e9e au r\u00e9seau LoRaWAN.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Ces ajustements permettent une surveillance plus r\u00e9active et une meilleure anticipation des situations \u00e0 risque.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Une plateforme connect\u00e9e pour renforcer la s\u00e9curit\u00e9<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La pr\u00e9vention des risques passe aujourd&rsquo;hui par des outils capables de centraliser les donn\u00e9es et ;<\/li>\n\n\n\n<li>les alertes automatiques ;<\/li>\n\n\n\n<li>la surveillance \u00e0 distance ;<\/li>\n\n\n\n<li>la sensibilisation des \u00e9quipes.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">En r\u00e9unissant ces diff\u00e9rents dispositifs, les exploitations viticoles am\u00e9liorent durablement la s\u00e9curit\u00e9 des op\u00e9rateurs tout en valorisant le
